With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix.
Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.

This bread is delicious! The directions are right - no mixer needed. Just a large bowl and a wooden spoon. I doubled it this morning. I had 4 smallish bananas, upped the salt to 1/4 teaspoon, and used the decreased amount of sugar for a total of 1 1/2 cups. I used 4 ceramic mini loaf pans and baked for 50 minutes until a toothpick inserted into the center came out clean.
