English Muffin Bread


Combine 3 cups flour, yeast, sugar, salt and soda. Heat liquids until very warm (120 - 130 degrees F). Add to dry ingredients, beat well. Stir in rest of flour to make stiff batter.

Grease two loaf pans and sprinkle with corn meal. Spoon batter into pans and sprinkle tops with corn meal. Cover and let rise in a warm place for 45 minutes.

Bake at 400 degrees F for 25 minutes. Remove from pans to cool immediately.

An inexperienced baker might think something went wrong, but it really should look like a super-elastic'y cake batter. Makes wonderful toast!
