Tenderloin and Tortellini Skillet

Ingredients:

Directions:
Heat olive oil in a large skillet over medium-high heat until hot. Add beef. Cover and cook, stirring, until beef is browned.

Remove skillet from heat and add garlic powder, tomatoes, tomato sauce, broth, vegetables, and tortellini.

Return skillet to heat. Bring to a boil. Reduce heat and simmer until some liquid evaporates, about 10 minutes.

Sprinkle Parmesean over top. Serve hot or at room temperature.

Cristin - A really nice weeknight dinner--easy to make, easy to clean up, and kid-pleasing. I'd substitute cheaper meat for the tenderloin next time (sirloin, maybe) but the ease & taste of this recipe are great.

Elisabeth - I used a pork tenderloin instead of beef. I seared the tenderloin in a skillet first until it was browned on all sides, then I put it in a hot oven 400 degrees for 10 min. While the tenderloin cooked, I made the pasta and sauce. I sliced the tenderlion into medallions and fanned it over the pasta. HUGE HIT. My whole family really enjoyed it. There were NO leftovers.
