Lime Marinated Flank Steak


In a Ziploc, combine first five ingredients, then add steak. Place in refrigerator and marinate at least 30 minutes or overnight.

Heat grill (either outdoor or stovetop) to high; lightly oil the grates. Remove steak from marinade, discard remaining marinade. Season the steak with salt and pepper. Place steak on grill; cover (if using outdoor grill). Cook, turning once, until the meat has reached the desired doneness, 6-8 minutes for medium rare. Let stand for 10 minutes before slicing thin.

I use prepared fresh grated ginger - I find it in the refrigerated produce section, hear the fresh herbs, in a tube. It saves me the time and frustration of peeling and mincing ginger root.

We usually have this with a noodle side dish because the kiddos don't care for mashed potatoes, but mashed potatoes are better! Great with a salad or green vegetable. This is one of the few proteins all the kids willingly eat every time!!!
