Honey-Rosemary Lamb Shanks

Preheat the oven to 325

Coat a large ovenproof skillet with non-stick vegetable cooking spray. Place over medium-high heat until drops of water sprinkled into the skillet dance on the surface. Add lamb and cook, turning until browned on all sides.

In a medium bowl mix the remaining ingredients. Pour over lamb. Cover and bake for 2 1/2 hours, or until the lamb is fork-tender.

I usually use a little olive oil instead of cooking spray. I then take the oil and with my finger, coat the inside of the measuring cup before measuring the honey- that way the honey slides right out instead of creating a sticky mess that I have to use a spatula on.

Also, whenever I am chopping onions I’m inclined to chop an extra one and put it in a freezer bag in the freezer. That way when I need a chopped onion the next time I can just pull some pre-chopped onion out of the freezer. As long as you’re going to cook it frozen onions can be substituted for fresh. This is one of my favorite time-saving tips.
