Meanwhile, cook beef in a large skillet, stirring until it crumbles and is no longer pink; drain. Stir in pasta sauce, set aside.
Place cream cheese in 1 qt glass bowl, microwave at HIGH for 1 minute or until softened. Stir in cottage cheese and sour cream. Spread mixture over noodles.
Spoon beef mixture over cream cheese mixture. Sprinkle with Parmesan cheese.
Cover tightly with heavy-duty plastic wrap; fold back a small corner to allow steam to escape. Microwave at HIGH 6-8 minutes or until mixture is thoroughly heated through.

This recipe is easily doubled, but the larger pan makes it hard to microwave, so I usually bake it at 350* for 20 minutes or so. That makes prep time longer, but still less than an hour. This also preps well (doubled) in the Pampered Chef covered stoneware baker in the microwave. This also preps well in advance and then reheats, just be sure to either use a GladWare OvenWare pan or allow the glass pan to come to room temp before putting it in the oven/micro.
AJ - What a delicious meal. It was super easy and quick to make. I used macaroni noodles instead.
Kel Cooper - This has quickly become my family's favorite meal. It tends to be a little pricier if you're only buying the ingredients for this meal so we don't do it all the time ... but when we do, yummmmm!! We also put shredded mozzarella cheese on top - definitely worth a try as well :)
